- The processor will update your order with the weight of the meat
- The meat will be hung to age (we only age beef)
- While the meat is hanging (up to 14 days), you can log into your account and edit the cutting instructions
- When it is time, the processor will lock in your cutting instructions and pass them to the cutting room
- The meat will be cut according to your instructions
- You will receive an invoice with a timeline to pick up to avoid storage fees
